Creamier Corn Casserole

½ c. butter
¼ c. flour
¼ c. sugar
2 eggs, well beaten
1 c. whole milk
1 (15.25-oz.) can whole kernel sweet corn, drained
1 (14.75-oz.) can creamed-style sweet corn
Salt/black pepper to taste

  1. Preheat oven 350.
  2. In saucepan, heat butter, swirling pan until just melted.
  3. Let butter cool for 2-3 minutes.
  4. Whisk in flour until well incorporated.
  5. Whisk in sugar, eggs and milk.
  6. Stir in the corn into butter mixture.
  7. Season with salt and pepper.
  8. Bake uncovered until center is set and browned and caramelized on top, about 1 hour and 15 minutes.
  9. Let stand 5 minutes, then serve warm.
