Healthy Avocado-Chicken Salad
HEALTHY AVOCADO-CHICKEN SALAD
1 c. cooked chicken, chopped
1 ripe avocado, seeded, peeled, chopped
1 apple, cored and finely chopped
½ c. finely chopped celery
¼ c. finely chopped red onion
3 T. finely chopped cilantro or parsley
Zest of 1 lime
Juice of 1 lime
Kosher salt/black pepper to taste
Sandwich bread or salad greens
- In a bowl, add chicken, avocado, apple, celery and red onion.
- Gently mash the avocado with a fork and stir around so everything gets well mixed.
- Add the cilantro, lime zest and juice, salt and pepper to taste.
- If mixture seems a little dry, you can add more lime juice or olive oil.
- Serve on bread for a sandwich or with greens for a salad.
