Grilled Root Beer Pork Ribs
Ingredients
- 4 (12-oz.) bottles root beer
- 1 c. of your favorite BBQ sauce
- 1 head of garlic, crush cloves
- ¼ c. black peppercorns, cracked
- 2 large shallots, thinly sliced
- 16 c. ice
- 2 large racks of pork spare ribs, seasoned
- 2 T. fresh ground black pepper
- ¼ c. fresh lime juice
- 2 T. honey
Instructions
- In saucepan, bring 2 bottles of root beer to boil with the BBQ sauce, garlic, peppercorns, and shallots. Remove from heat, cover and let steep for 25 minutes.
- Transfer mixture to large roasting pan and add ice. Add the seasoned rib racks, cover and refrigerate overnite.
- Preheat oven 325. Remove ribs from marinade and scrape off most of solids. Transfer ribs to large rimmed baking sheet. Cover with foil and bake 2 hours until meat is tender but not falling off bone.
- In saucepan, combine remaining root beer with honey and pepper. Boil over medium-high heat, until reduced ⅔.
- Add lime juice and simmer 2 minutes.
- Light a grill. Grill ribs over high heat until richly browned about 4 minutes per side.
- Transfer racks to carving board and cut between ribs. Baste with the sauce once and then serve sauce on the side.
