Grilled Chive Butter Flavored Potatoes

1 stick butter, softened
1 c. finely chopped chives, divided
½ c. sour cream, plus more for serving
2 t. kosher salt
2 t. black pepper
4 (10-oz.) baking potatoes

1. In bowl, combine butter, ¾ c. chives, ½ c. sour cream, salt and pepper. Mix until smooth.
2. Transfer the butter mixture to large sheet of plastic wrap and form a log. Wrap and refrigerate until firm, about 1 hour or more.
3. Light a gas grill.
4. With a sharp knife, slice each potato crosswise at 1/3” intervals, cutting down but not all the way through the potato.
5. Drizzle with olive oil all over potato and season with salt and pepper. Try to get some of the olive oil to fall in between the slices.
6. Cut the solid chive butter into thin slices.
7. Carefully tuck the butter in between the potato slices.
8. Wrap each potato tightly in the foil.
9. Set potatoes on grill over low heat. Cover and cook, turning occasionally, until tender, about 45-50 minutes, depending on size of potato.
10. Unwrap potatoes and garnish with additional chopped chives and sour cream. Also have salt and pepper on the side.
*****Chive butter can be made at least 2-3 days ahead. I have also baked in 375 oven for about 1-1 ½ hours or until tender.
