Favorite Turkey, Swiss Cheese and Carrot Salad Wraps
Ingredients
- [b]SPREAD:[/b]
- 3 T. canola mayo
- 1 T. Dijon mustard
- 1 t. minced fresh dill
- 1 t. grated lemon zest
- 1 t. fresh lemon juice
- Black pepper
- 1. SPREAD: Combine all the ingredients in a bowl, whisking to mix well. Set aside.
- [b]CARROT SALAD:[/b]
- ⅓ c. grated peeled carrots
- ½ t. minced fresh tarragon
- ½ t. white wine vinegar
- ¼ t. salt
- ¼ t. salt
- 1. Combine all ingredients. Taste for seasoning. Serve with wrap.
- WRAPS:
- 1 whole grain flatbread
- 1 oz. sliced oven-roasted turkey
- 2 slices thinly sliced Swiss cheese
- ¼ c. fresh baby spinach leaves
- ½ c. chopped red bell pepper
Instructions
- Spread half of Dijon mustard mixture over flatbread.
- Top with turkey, cheese and spinach.
- Arrange bell pepper on wrap.
- Starting with short edge, roll up flatbread.
- Cut in half diagonally and serve with carrot salad.
