Savory Yam Bisque with Minted Chili Oil
Ingredients
- BISQUE:
- 8 good quality bacon slices, chopped
- 2 c. chopped fresh carrots
- 1 c. chopped onion
- 2 T. minced garlic
- 3 c. water
- 2 lbs. yams, peeled and cubed
- 3 bay leaves
- 1 T. curry powder
- ½ t. cinnamon
- ½ t. smoked paprika
- Salt, black pepper to taste
- 1 ½ c. heavy whipping cream
- 1 c. sour cream
Instructions
- In large saucepan, cook bacon until crispy. With slotted spoon, remove bacon and drain on paper towel.
- Discard drippings but retain just enough to cover bottom of pan.
- Add carrots and onion to drippings and cook until tender.
- Add garlic and cook another minute.
- Stir in water, yams, bay leaves, curry, cinnamon, paprika, salt and pepper.
- Bring to boil. Reduce heat and simmer covered for 12-15 minutes or until veggies are tender.
- Discard bay leaves.
- Stir in cream and sour cream just until blended. Taste for seasoning.
- When ready to serve, ladle into bowls and drizzle top with MINTED CHILI OIL.

MINTED CHILI OIL:
Ingredients
- 18-20 mint sprigs, chopped
- 3 T. good quality olive oil
- ½ t. sugar
- 1 t. salt
- 1 t. black pepper
- ½ t. crushed red pepper flakes
Instructions
- In small bowl, combine all the ingredients and let set for 10-12 minutes.
- Process in blender or food processor until smooth.
- Place in a small saucepan and heat through. DO NOT BOIL!
- Drizzle on top of bisque after served in individual bowls.
