Easy Eggs and Spinach Nests

Good quality olive oil or canola oil
2-3 c. fresh baby spinach
1 large egg or equivalent in an Egg-Beater
Salt, pepper
Red pepper flakes
Sriracha, optional
½ Whole Wheat English Muffin, optional

1. In a non-stick small skillet, drizzle oil on the bottom and heat over medium.
2. Add the spinach to the pan, leaving the center open for the egg.
3. Crack egg in middle or pour in Egg Beater.
4. With tongs, gently move spinach around as it cooks, gently pushing toward the egg as it cooks.
5. Season with salt, pepper and pepper flakes
6. After about 1-2 minutes, with spatula, flip the egg/spinach mixture. The spinach should adhere to the egg.
7. Cook another 1-2 minutes depending on how you like your egg cooked.
8. Season again if needed with salt and pepper.
9. Place on top of toasted whole wheat English muffin, if desired.
10. Drizzle with Sriracha, if desired.
*****If you want to cook more than one at a time, use a larger skillet and place spinach in the whole bottom of skillet and gently move it to make as many holes for the eggs that you want to cook. You just have to be careful when flipping. You might have to break some apart to flip if you can’t flip the whole thing.
You can also grill some ham, etc. and add to the English Muffin before topping with egg/spinach. There are many things you can do with this dish. You can also add cheese, chopped mushrooms, etc. Let your imagination run!
