Easy Edamame Orzo Dish

1 (8-oz.) bag orzo
Olive oil
Black pepper
2 (8-oz.) bags frozen shelled edamame
Lemon zest
Juice of 1 lemon
Grated parmesan cheese, optional

1. Boil orzo according to package directions. Drain and set aside.
2. Cook frozen edamame in microwave (follow directions on package.) Drain
3. In bowl, place the edamame and add as much orzo as you like. If you have left over orzo just use in another recipe.
4. Season with zest, lemon juice, salt, black pepper. Drizzle with olive oil. Mix well and taste for seasoning.
5. When serving, add grated cheese if desired.
*****This is a great dish to have on hand in ref and just zap in microwave for a quick snack or meal. You can add chicken, beef, seafood to this dish as well.
