Delightful Cauliflower Nachos
1 fresh cauliflower head, cut into slices
Olive oil
1 t. Salt
1 t. Paprika
1 t. Garlic powder
1 t. Cumin
1 t. Ancho Chili powder
1-2 c. shredded Colby Jack cheese and Mexican Blend Cheese, or your favorite.
Salsa, Guacamole, Pickled jalapeno slices, garnish
1. Spray a baking sheet pan with PAM.
2. Mix the salt, paprika, garlic powder, cumin and chili powder in a small bowl.
3. Rub all sides of cauliflower slices with olive oil.
4. Sprinkle the mixed seasoning all over the cauliflower slices.
5. Place the seasoned slices on the baking sheet.
6. Bake at 400 for 20 minutes.
7. Remove from oven. Sprinkle cheese all over the cauliflower.
8. Put back in oven at 400 for 5 minutes, until cheese is bubbly.
9. You can spread the salsa, guacamole and jalapeno slices all over the top.
10. Serve and put extra garnish on the side.
*****I thought these were quite good as a sub for the calorie loaded down NACHOS! Garnish as you like!
