Various Shepherd’s Pies (Cheeseburger, BBQ, Italian, Mexican)

1 ½ lbs. russet potatoes, peeled and cut up
½ c. sour cream
¼ c. milk
½ t. salt
1 c. shredded cheddar cheese
1 ½ lb. ground beef
1 c. chopped red/green bell peppers
½ c. chopped onion
2 T. minced garlic
1 ½ c. frozen whole kernel corn
1 c. water
1 (6-oz.) can tomato paste
½ c. rough chopped dill pickles
¼ c. yellow mustard
1 t. crushed dried oregano
Extra cheese to sprinkle on top
Sliced green onions, garnish
Crispy cooked bacon, crumbled, garnish

1. Preheat oven 350.
2. In large saucepan, add potatoes to enough salted water to cover them, boil until tender. Drain.
3. Mash potatoes and gradually beat in sour cream, milk and salt.
4. Stir in ½ c. of cheese.
5. In a large skillet cook beef, bell peppers, onion and garlic, until meat is browned. Drain any fat.
6. Stir in the corn, water, paste, pickles, mustard and oregano. Bring to boil, reduce heat and simmer uncovered, 5 minutes.
7. Stir in remaining cheese.
8. Transfer meat mixture to 2 ½ qt. shallow baking dish.
9. Spoon mashed potatoes in mounds on top of meat mixture.
10. Sprinkle with additional cheese.
11. Bake 20 minutes or until heated through and cheese is melted.
12. Top with green onions and bacon, if desired.

EASY BBQ SHEPHERD’S PIE

Follow recipe for EASY CHEESEBURGER SHEPHERD’S PIE except for the following changes:

1-Swap sweet potatoes for russet potatoes.
2-Swap ground pork for ground beef.
3-Add ½ c. BBQ sauce for the tomato paste.
4-Optional, top with chopped pickles.

EASY ITALIAN SHEPHERD’S PIE

Follow recipe for EASY CHEESEBURGER SHEPHERD’S PIE except for the following changes:

1-Swap shredded mozzarella or provolone cheese for cheddar.
2-Swap hot Italian sausage (bulk or slices) for ground beef.
3-Swap out peas for the corn.
4-Omit the pickles, mustard, green onions and bacon.
5-Top with chopped oil-packed dried tomatoes and snipped fresh basil leaves.

EASY MEXICAN SHEPHERD’S PIE

Follow recipe for EASY CHEESEBURGER SHEPHERD’S PIE except for the following changes:

1-Add ½ c. salsa with tomato paste.
2-Swap shredded Monterey Jack cheese for the cheddar.
3-Omit pickles and bacon.
3-Top with sliced jalapeno slices, diced avocado and dollop of sour cream, if desired.
