Delicious Cracklin’ Tasso Baked Yams
DELICIOUS CRACKLIN’ TASSO TWICE BAKED YAMS
4 large yams, washed
Olive oil
Kosher salt
1 c. shredded Gruyere cheese
¼ c. butter, softened
1 egg, beaten
1 t. chopped fresh rosemary
Black pepper
¼ c. finely diced tasso
½ c. crumbled crackins
Chopped fresh rosemary, garnish
- Preheat oven 425. Line large rimmed baking sheet with foil.
- Place potatoes on pan. Mix olive oil and salt and drizzle over yams to coat all sides.
- Bake 45 minutes or until tender. Let cool 10 minutes.
- Cut a wedge out of the top of each yam and scoop out pulp, leaving ¼” border. Return to pan.
- Reduce oven to 400.
- In bowl, using potato masher, mash pulp, cheese, butter, egg, rosemary, pepper and salt until smooth.
- Spoon into shells.
- Bake until light golden brown, about 20 minutes.
- In saucepan, heat 1 T. olive oil over medium heat. Add tasso and cook until golden, about 2-3 minutes.
- Remove from heat and stir in cracklins.
- Top yams with tasso mixture and garnish with rosemary.
