Decadent Greek Crab Dip

DECADENT GREEK CRAB DIP
Olive oil
1 small red onion, finely diced
1 red Fresno chile or red jalapeno, seeded and chopped
1 T. minced garlic
Kosher salt, black pepper
1 (8-oz.) pkg. cream cheese, softened
2 T. chopped fresh parsley
Lemon zest and juice from 1 lemon
1 T. chopped fresh dill
1 t. chopped fresh oregano
1 T. red wine vinegar
1 lb. fresh lump crabmeat, drained and picked
1 c. crumbled feta cheese
¼ c. panko bread crumbs
1 T. melted butter
½ t. Paprika
Assorted crackers or baguette slices

  1. Preheat oven 350. In a medium skillet, drizzle olive oil to cover bottom and place over medium heat.
  2. Add onion, chile, garlic, salt and pepper. Cook, stirring constantly until onions are clear.
  3. Reduce heat to low, stir in cream cheese, stirring constantly until melted.
  4. Remove from heat and stir in parsley, zest, lemon juice, dill, oregano and vinegar until combined.
  5. Gently stir in feta and crabmeat. Taste for seasoning.
  6. Pour mixture into lightly greased1 ½ quart baking dish.
  7. Combine bread crumbs, butter and paprika in a small bowl and sprinkle topping evenly over crab mixture.
  8. Bake until golden and bubbly, about 20 minutes.
  9. Let stand 5 minutes and serve with assorted crackers or baguette slices.
