Ingredients
  • 4 small yams, cut into cubes
  • 4-8 baby yukons, cut in half (depends on size of yukons)
  • 1 Vidalia onion, thinly sliced
  • ½ c. fresh pic de gallo
  • Olive oil
  • Salt, black pepper
  • Mrs. Dash’s Extra Spicy Seasoning Mix
  • Balsamic Vinegar
  • Ground cumin
  • 1 (12-oz.) bottle Marzetti Simply Dressed Vinaigrette (Light Roasted Tomato Flavor)
  • PAM
Instructions
  1. Spray baking dish with PAM.
  2. Wash potatoes and cut so that all are about same size.
  3. Place sliced onion in bottom of baking dish.
  4. Place potatoes on top.
  5. Drizzle with olive oil and season with salt, pepper, cumin and Mrs. Dash’s.
  6. Mix well.
  7. Top with pico.
  8. Drizzle with balsamic vinegar and Marzetti dressing.
  9. Mix well but keep the onions on the bottom.
  10. Cover with foil.
  11. Bake at 350 until potatoes are tender (30-40 minutes) depending on size of potatoes.
  12. Serve.
