Crispy Baked Potato Medley
Ingredients
- 4 small yams, cut into cubes
- 4-8 baby yukons, cut in half (depends on size of yukons)
- 1 Vidalia onion, thinly sliced
- ½ c. fresh pic de gallo
- Olive oil
- Salt, black pepper
- Mrs. Dash’s Extra Spicy Seasoning Mix
- Balsamic Vinegar
- Ground cumin
- 1 (12-oz.) bottle Marzetti Simply Dressed Vinaigrette (Light Roasted Tomato Flavor)
- PAM
Instructions
- Spray baking dish with PAM.
- Wash potatoes and cut so that all are about same size.
- Place sliced onion in bottom of baking dish.
- Place potatoes on top.
- Drizzle with olive oil and season with salt, pepper, cumin and Mrs. Dash’s.
- Mix well.
- Top with pico.
- Drizzle with balsamic vinegar and Marzetti dressing.
- Mix well but keep the onions on the bottom.
- Cover with foil.
- Bake at 350 until potatoes are tender (30-40 minutes) depending on size of potatoes.
- Serve.
