Creamy Baked Spinach Squares

CREAMY BAKED SPINACH SQUARES
PAM
1 (9-oz,) pkg. fresh spinach, chopped
3 T. butter
½ c. chopped onion
3 T. flour
1 T. snipped fresh tarragon
½ t. salt
1 c. milk
½ c. finely shredded parmesan cheese
5 eggs, separated
Olive oil, sour cream, red or black pepper

  1. Coat 2 qt. square baking dish with PAM.
  2. In large nonstick skillet, cook spinach in 1 T. boiling water until wilted.
  3. Transfer to colander, squeeze out as much liquid as possible.
  4. In same skillet, melt butter.
  5. Add spinach and onion. Cook until onion is tender.
  6. Stir in flour, tarragon and salt.
  7. Add milk. Cook and stir until thickened and bubbly. Remove from heat.
  8. Cool 20 minutes.
  9. Preheat oven 400.
  10. In bowl stir together spinach mixture, cheese and egg yolks.
  11. In a large bowl, beat egg whites wit mixer on HIGH until stiff peaks form.
  12. Fold egg whites, half at a time into spinach mixture.
  13. Transfer to baking dish.
  14. Bake 20 minutes or until puffed and golden.
  15. To serve, drizzle additional olive oil, add sour cream, the grated cheese and additional pepper if needed.
