Cooling Watermelon Punch

COOLING WATERMELON PUNCH
1 c. water
½ c. sugar
6 c. cubed and seeded watermelon
1 (12-oz.) can frozen lemonade concentrate, thawed
2 c. unsweetened pineapple juice
- In small saucepan, bring 1 c. water and sugar to boil over low heat.
- Stir until sugar dissolves.
- Remove from heat and let cool completely.
- In a blender, combine watermelon and sugar syrup. Process until smooth.
- Strain mixture through a wire mesh sieve into large pitcher.
- Press down on watermelon to extract liquid. Discard solids.
- Stir lemonade and pineapple juice into pitcher.
- Serve over ice.
