Broccoli Texmati Mushroom Medley Rice
Ingredients
- 2 (12-oz.) bags of fresh cut broccoli florets
- 1 (12.7-oz.) container Rice Select Texmati Mushroom Medley Rice
- Salt, black pepper, garlic powder
- Red pepper flakes
- Olive oil
- Fresh lemon juice
Instructions
- Cook broccoli according to package directions. I use the ones you can just place in microwave and cook for 2 ½ minutes.
- Remove from bag after cooking and season with salt, black pepper, garlic powder and red pepper flakes.
- Cook 2 c. of the rice medley. Follow directions on container.
- In a bowl, place the seasoned broccoli and gradually add in rice. Add the amount you would like.
- Drizzle with olive oil and squeeze fresh lemon juice over it. Mix well.
- Taste for additional seasoning.
- Garnish with fresh grated parmesan cheese.
Notes
*****With any leftovers I like to add cut up cooked chicken or seafood. Makes a nice casserole. Just add a nice salad. With any leftover rice, I add to crawfish or other seafood and add fresh shucked corn kernels and cherry tomatoes. Great dish!!
