Broccoli Texmati Mushroom Medley Rice

  • 2 (12-oz.) bags of fresh cut broccoli florets
  • 1 (12.7-oz.) container Rice Select Texmati Mushroom Medley Rice
  • Salt, black pepper, garlic powder
  • Red pepper flakes
  • Olive oil
  • Fresh lemon juice
  1. Cook broccoli according to package directions. I use the ones you can just place in microwave and cook for 2 ½ minutes.
  2. Remove from bag after cooking and season with salt, black pepper, garlic powder and red pepper flakes.
  3. Cook 2 c. of the rice medley. Follow directions on container.
  4. In a bowl, place the seasoned broccoli and gradually add in rice. Add the amount you would like.
  5. Drizzle with olive oil and squeeze fresh lemon juice over it. Mix well.
  6. Taste for additional seasoning.
  7. Garnish with fresh grated parmesan cheese.
*****With any leftovers I like to add cut up cooked chicken or seafood. Makes a nice casserole. Just add a nice salad. With any leftover rice, I add to crawfish or other seafood and add fresh shucked corn kernels and cherry tomatoes. Great dish!!
