Baby Cucumber and Assorted Grape/Cherry Tomatoes with Zesty Honey Lemon Dressing
Ingredients
- 8-10 baby cucumbers (I use the ones for pickling), sliced
- 1 carton of red grape tomatoes, cut in half
- 1 carton of yellow grape tomatoes, cut in half
- 1 carton of the mixed variety of cherry tomatoes, cut in half
- DRESSING:
- 1 T. chopped fresh parsley
- 3 T. honey
- 1 T. lemon zest
- ⅓ c. fresh lemon juice
- 1 T. Dijon mustard
- 1 garlic clove, mined
- 1 shallot, minced
- 1 t. salt
- 1 t. black pepper
- ⅓ c. extra virgin olive oil
Instructions
- In serving bowl, combine the sliced cucumbers and tomatoes. Refrigerate until ready to serve.
- In a bowl, whisk together all the ingredients except the oil.
- Slowly, add the olive oil, in a steady stream, whisking constantly until smooth.
- Use immediately or store in airtight container in refrigerator up to 5 days.
- If chilled, let stand at room temperature for 15 minutes. Whisk before serving.
- Drizzle over the cucumbers and tomatoes. Taste for seasoning.
Notes
*****This dressing is good over most green veggies like broccoli, asparagus, green beans, etc.
