Ingredients
  • 2 small zucchini
  • 3 medium yellow squash
  • 2 T. olive oil
  • ⅓ c. freshly grated parmesan cheese
  • 1 T. minced fresh basil
  • Salt and pepper to taste
Instructions
  1. Slice zucchini and squash diagonally, using a crinkle cutter, if possible.
  2. Heat olive oil in large skillet. Saute veggies for about 3 minutes until crisp-tender.
  3. Add cheese and basil. Toss gently and season to taste. Serve.
Notes
*****Leftovers mixed with diced chicken and some pasta, make a nice leftover dish.
