Aromatic Yams with Bourbon Butter

3 yams, halved lengthwise
Olive oil
Kosher salt
¼ c. plus 2 T. bourbon, divided
1 c. chopped pecans or walnuts or almonds
½ c. plus 2 T. flour
½ c. firmly packed light brown sugar
½ t. ground cinnamon
2/3 c. butter, melted

  1. Preheat oven 400.
  2. Rub yams with oil and salt.
  3. Place yams, cut side down on rimmed baking sheet. Brush with 2 T. bourbon.
  4. Bake until softened, 20-30 minutes. Let cool slightly. Leave oven on.
  5. Without cutting through skin, make a lengthwise slit down center of each potato half.
  6. Gently press apart at slits to open up yams, slightly.
  7. In bowl, stir together nuts, flour, sugar and cinnamon.
  8. In another bowl, stir together melted butter and ¼ c. bourbon.
  9. Fold half of butter mixture into pecan mixture. Reserve remaining butter mixture.
  10. Top each potato half with 1/3 c. of nut crumble.
  11. Bake until crumble is browned, 10-15 minutes.
  12. Drizzle with reserved butter, rewarming in microwave if necessary.
