Anytime Sweet Potato Biscuits

ANYTIME SWEET POTATO BISCUITS
1 ½ c. sweet potatoes, mashed
½ c. butter, frozen
3 ¼ c. flour
2 T. baking powder
¼ t. baking soda
1 c. buttermilk, cold
¼ c. Tony Chachere’s Praline Honey Ham Marinade injectable
1 t. Tony Chachere’s Creole seasoning
2 T. sugar
PRALINE BUTTER SAUCE:
1/3 c. Tony Chachere’s Praline Honey Ham Marinade Injectable
3 T. butter, melted

  1. PRALINE BUTTER SAUCE: Place the Tony Chachere’s Praline Honey Ham Marinade Injectable and melted butter in a microwave safe bowl, microwave for one minute. Set aside.
  2. Preheat oven 400 and line baking sheet with parchment paper. Set aside.
  3. In large bowl, combine mashed sweet potatoes, Praline Honey Marinade and buttermilk. Whisk to combine.
  4. In another bowl, add 3 c. flour, baking powder, baking soda, sugar and Tony’s Creole seasoning. Stir to mix well.
  5. Using a box grater, grate frozen butter into small pieces and mix into flour mixture.
  6. Add flour mixture into sweet potato mixture and mix until it forms a dough.
  7. Turn out dough onto lightly floured surface. Dough will be sticky, so sprinkle the remaining flour on top of dough as well.
  8. Kneed dough 10 times, sprinkling with additional flour as necessary.
  9. Roll dough out to about ¾” thick and cut with round cutters.
  10. Place on prepared baking sheet and bake for 15-20 minutes or until golden brown and cooked through.
  11. Brush top of biscuits with PRALINE BUTTER SAUCE.
    *Will serve 8-12 people.
