All-in-One Shrimp Orzo Skillet Surprise

Olive oil
1 medium Vidalia onion chopped
1 pt. cherry tomatoes, halved (if you can varied colors looks nice)
3 T. minced garlic
1 T. chopped fresh oregano
Salt, black pepper
3 ¼ c. chicken broth
12 oz. uncooked orzo pasta
1 lb. large raw shrimp, peeled and deveined
½ c. Panko breadcrumbs
½ c. grated parmesan cheese
2 T. melted butter
1 T. lemon zest
Parsley, garnish
Lemon wedges, garnish

  1. Preheat oven 400.
  2. Heat oil in large ovenproof skillet (with lid), just enough to coat the bottom of pan.
  3. Add onion and cook until soft.
  4. Add tomatoes, garlic, oregano and season with salt and pepper.
  5. Cook for about 2 minutes.
  6. Stir in broth and orzo. Bring to boil, stirring occasionally.
  7. Cover and place in oven and bake until orzo is tender and liquid is mostly absorbed, about 12-15 minutes.
  8. Remove from oven. Put oven on BROIL.
  9. Toss shrimp with olive oil, salt and pepper.
  10. Arrange the shrimp on top of orzo.
  11. Combine panko, parmesan, butter and zest.
  12. Sprinkle over shrimp.
  13. Return to oven that is on BROIL, uncovered.
  14. Cook until shrimp are opaque, about 3-4 minutes.
  15. Garnish with parsley and lemon wedges.
