Alice’s Easy Shrimp and Mushroom Risotto

1 (5.5-oz.) box Lundberg Risotto (Garlic Primavera-flavor)
2 c. chopped boiled shrimp
1 c. sliced mushrooms
3 green onions, chopped
½ c. chopped fresh parsley
Salt, red/black pepper, garlic powder

  1. Follow directions on the box of store-bought risotto.
  2. In the last 5 minutes of cooking of the risotto, stir in mushrooms and shrimp.
  3. Taste for seasoning.
  4. At the end of cooking, stir in green onions and parsley.
  5. Serve hot. You can prepare ahead of time and place in serving dish and reheat in microwave or oven at 325. Do not overheat.
    *I usually find the store-bought risotto mixes in specialty stores or larger supermarkets. There are various flavors. You can also sub in different seafood, mushrooms or even chicken, etc.
