Alice’s Easy Shrimp and Mushroom Risotto
ALICE’S EASY SHRIMP AND MUSHROOM RISOTTO
1 (5.5-oz.) box Lundberg Risotto (Garlic Primavera-flavor)
2 c. chopped boiled shrimp
1 c. sliced mushrooms
3 green onions, chopped
½ c. chopped fresh parsley
Salt, red/black pepper, garlic powder
- Follow directions on the box of store-bought risotto.
- In the last 5 minutes of cooking of the risotto, stir in mushrooms and shrimp.
- Taste for seasoning.
- At the end of cooking, stir in green onions and parsley.
- Serve hot. You can prepare ahead of time and place in serving dish and reheat in microwave or oven at 325. Do not overheat.
*I usually find the store-bought risotto mixes in specialty stores or larger supermarkets. There are various flavors. You can also sub in different seafood, mushrooms or even chicken, etc.
