Alice's Easy Chicken and Beef Stir-Fry with Veggies
Ingredients
- ½ lb. boneless chicken strips or tenders
- ½ lb. boneless flank steak strips or your favorite beef cut into thin strips
- Salt, red/black pepper, garlic powder
- Olive oil
- 4 T. Butter
- 1 large red onion, cut into medium wedges or slices
- 1 of each color bell pepper (red, orange, yellow, green) cut into strips
- 2-3 fresh jalapenos, seeded and cut into small pieces
- 1 (8-oz.) container sliced mushrooms
- 1 pt. assorted cherry tomatoes, halved
- Worcestershire sauce
- Soy Sauce
- Juice of 2 limes
Instructions
- In large skillet or stir fry pan, spray wit PAM.
- Drizzle olive oil to coat bottom of pan. Place over medium/high heat.
- Add butter and melt and mix with olive oil.
- Season chicken and cook in the skillet until not pink. Drizzle with Worcestershire and soy sauce. This takes about 5-8 minutes depending on size of strips. Remove from pan and place on large platter.
- If needed add more olive oil and butter and add seasoned steak strips. Drizzle with Worcestershire and soy sauce. Meat takes less time, about 3-5 minutes.
- Remove from pan and place on opposite side of platter with chicken.
- Add the onion and peppers to the skillet and saute until tender-crisp.
- Add the mushrooms and tomatoes and cook another 2-3 minutes.
- Drizzle with more Worcestershire and soy sauce. Season with salt and pepper.
- Place the cooked veggies in center of the chicken and beef strips.
- Squeeze the juice of 2 limes all over the platter.
- Serve with your favorite tortilla wrap and condiments.
