Lemony Salmon with Whole Wheat Pasta
LEMONY SALMON WITH WHOLE WHEAT PASTA
½ lb. whole-wheat spaghetti or your favorite pasta
1 T. minced garlic
Olive oil
Salt, black pepper
4 (4-oz.) pieces salmon
¼ c. chopped fresh basil leaves
¼ c. capers, drained
Zest of 1 lemon
¼ c. fresh lemon juice
2 c. fresh baby spinach
- Boil pasta in salted water, following directions on package. Drain and transfer to a large bowl.
- Add the garlic, about 2-3 T. olive oil, salt and pepper. Toss to combine.
- In a medium skillet warm enough olive oil to cover the bottom over medium heat.
- Season salmon with salt and pepper.
- Add fish to skillet and cook until medium-rare, about 2-3 minutes per side, depending on thickness of fish.
- Remove fish from pan.
- To the pasta, add basil, capers, zest and lemon juice and toss to combine.
- Place out 4 serving dishes or bowls.
- Place ½ c. of spinach in each bowl.
- Top with ¼ of the pasta and then top with the salmon.
- Serve immediately.
