Super Easy Crock-Pot Taco Soup
SUPER EASY CROCKPOT TACO SOUP
1 yellow onion, diced
2 T. olive oil
2 T. minced garlic
1 (28-oz.) can corn, drained
1 (28-oz.) can black beans, drained and rinsed
1 (28-oz.) can Rotel or diced tomatoes
3 c. water
1 packet dried Ranch dressing seasoning
Salt/black pepper to taste
1 t. cumin
2 T. chili powder
¼ c. chopped cilantro
2 lbs. ground beef or turkey or chicken
Toppings: grated cheese, sour cream, fresh avocado slices, tortilla chips, pico
- In large saucepan, heat olive oil and saute garlic and onion.
- Add beef and brown until cooked through.
- Drain beef mixture and add to crockpot.
- Add corn, beans, Rotel and water to crockpot. Mix well.
- Add salt, pepper, cumin, chili powder, cilantro and Ranch dressing packet. Mix well.
- Heat on LOW for 4-6 hours.
- Serve with toppings.
