Delicious Cracklin’ Tasso Baked Yams

DELICIOUS CRACKLIN’ TASSO TWICE BAKED YAMS
4 large yams, washed
Olive oil
Kosher salt
1 c. shredded Gruyere cheese
¼ c. butter, softened
1 egg, beaten
1 t. chopped fresh rosemary
Black pepper
¼ c. finely diced tasso
½ c. crumbled crackins
Chopped fresh rosemary, garnish

  1. Preheat oven 425. Line large rimmed baking sheet with foil.
  2. Place potatoes on pan. Mix olive oil and salt and drizzle over yams to coat all sides.
  3. Bake 45 minutes or until tender. Let cool 10 minutes.
  4. Cut a wedge out of the top of each yam and scoop out pulp, leaving ¼” border. Return to pan.
  5. Reduce oven to 400.
  6. In bowl, using potato masher, mash pulp, cheese, butter, egg, rosemary, pepper and salt until smooth.
  7. Spoon into shells.
  8. Bake until light golden brown, about 20 minutes.
  9. In saucepan, heat 1 T. olive oil over medium heat. Add tasso and cook until golden, about 2-3 minutes.
  10. Remove from heat and stir in cracklins.
  11. Top yams with tasso mixture and garnish with rosemary.
