Zesty Cobb Salad Wraps

ZESTY COBB SALAD WRAPS
2 romaine lettuce hearts, chopped
½ lb. turkey breasts, chopped
1 c. crumbled blue cheese
4 slices crisp-cooked bacon, crumbled
2 hard-cooked eggs, peeled and chopped
4 green onions, chopped
1 c. cherry tomatoes, halved
1 avocado, peeled, pitted, diced
2 T. olive oil
1 T. lemon juice
8 (10”) flour tortillas

1. Combine lettuce, turkey, cheese, bacon, eggs, green onions, tomatoes and avocado in large bowl.
2. Add olive oil and lemon juice. Toss to coat.
3. Lay 4 tortillas on flat surface and spoon 2 c. of salad mixture on each.
4. Fold up bottom edge, then roll up lightly, folding in sides as you go.
5. Repeat with remaining tortillas and fillings.
6. Slice each in half on diagonal and serve.
