Delicious Baked Eggplant Spears
DELICIOUS BAKED EGGPLANT SPEARS
1 medium eggplant, cut into spears (leave peeling on)
Olive oil
Kosher salt/black pepper/ garlic powder
1 c. Italian bread crumbs
½ c. grated Parmesan cheese
2 eggs, lightly beaten
PAM
Dipping sauce (your choice)-Marinara, Ranch, Catsup, any Fancy Dressings, etc.)
- Preheat oven 450.
- Line baking sheet with parchment paper and spray with PAM.
- Place eggplant spears in bowl and season with salt, black pepper, garlic powder and drizzle with olive oil. Mix to coat spears.
- In another bowl, combine breadcrumbs and cheese.
- Place beaten eggs in another bowl.
- Dip spears into beaten eggs, then breadcrumbs.
- Place on baking sheet.
- Spray PAM over the spears.
- Bake 10 minutes, then flip and cook another 5-8 minutes or until golden. Serve hot with your favorite dipping sauce.
