Lemony Mushroom Ravioli

LEMONY MUSHROOM RAVIOLI
1(16-18-oz.) package of Giovanni Roma RANA Mushroom Ravioli, or your favorite brand
Salt
Olive oil
2 large lemons
4 T. good quality olive oil
4 T. olive oil infused butter
Salt/black pepper
Chopped fresh chives

  1. In a small sauce pan, melt the butter and add the olive oil.
  2. Zest the two lemons, salt, black pepper (to taste) and place in saucepan.
  3. Add the juice of the two lemons into the saucepan.
  4. Simmer for 1-2 minutes and set aside.
  5. In a large pot of salted boiling water, add 2 T. olive oil and follow directions on package of pasta and cook.
  6. Drain and place back into the pot.
  7. Add the warmed lemon zest sauce to the pasta and stir gently to cover all the pasta.
  8. Place in your serving dish or platter and garnish with chopped chives.
