Refreshing Watermelon Granita

REFRESHING WATERMELON GRANITA
6 c. chopped seedless watermelon
¼ c. sugar
¼ c. fresh lime juice
½ t. kosher salt
¼ t. red pepper
Zest of 1 lime
Watermelon wedges, to serve
- In a blender, add chopped melon, sugar, lime juice, salt and red pepper.
- Blend until smooth.
- Strain mixture through a fine-mesh sieve into 13×9” freezer-safe baking dish.
- Discard solids.
- Stir in zest.
- Freeze until edges begin to set, about 30-40 minutes.
- Using a fork, scrape mixture to break up frozen pieces.
- Freeze until mixture resembles fluffy shaved ice, about 4 hours, scraping to break up frozen pieces every 30 minutes.
- Serve in sugar-rimmed glasses with watermelon wedges.
*Garnish with extra lime zest, if desired.
