Comforting Crawfish Dirty Rice

3 T. butter
1 diced green bell pepper
2-3 stalks celery, diced
1 medium Vidalia onion, diced
1 lb. crawfish tails
3 T. minced garlic
Salt, red pepper, paprika
2 c. rice, cook following pkg. instructions
1 c. seafood stock
1 T. fresh lemon juice
Chopped green onions or parsley, garnish

1. In large skillet, melt butter.
2. Add bell pepper and celery and cook until nearly tender, 3-4 minutes.
3. Add onion and cook until they are translucent, 2-3 minutes.
4. Stir in crawfish and seasonings. Cook 3 minutes.
5. Stir in cooked rice, stock and lemon juice.
6. Bring to boil, reduce to low and simmer until all liquid is absorbed, 10-12 minutes, stirring occasionally.
7. Taste for seasoning.
8. Garnish with chopped green onions or parsley.
