¼ c. good quality lemon curd
2 ½ T. Limoncello
2 c. vanilla ice cream
4 vanilla meringue cookies, crushed
1. Combine curd and liqueur in small bowl, stirring with whisk to blend.
2. Add ice cream to mixture, stir to blend.
3. Spoon ½ c. of mixture into each of 4 bowls, top each with 1 crushed meringue cookie.
