Spicy Grilled Okra With Lemon Yogurt Dipping Sauce
2/3 c. plain Greek yogurt
1 T. chopped fresh mint
2 T. fresh lemon juice
1 T. minced garlic
Kosher salt/black pepper
1 t. ground coriander
½ t. curry powder
1 lb. small fresh okra pods, trimmed
Vegetable oil
8 Wooden skewers (soaked in water for 30 minutes) or metal ones
Lemon wedges, garnish
Flaked sea salt, garnish
1. Heat a large cast-iron grill pan over medium heat.
2. Grease pan with oil.
3. In bowl, whisk together yogurt, mint, lemon juice, garlic, kosher salt and black pepper. Set aside.
4. In larger bowl, whisk together coriander, curry powder, salt and pepper.
5. Add okra. Toss. Then drizzle with oil and toss to mix and coat the okra pods.
6. Thread okra onto skewers.
7. Cook until tender and grill marks form, about 3 minutes per side.
8. Serve with lemon wedges, yogurt sauce and sprinkle with sea salt, if desired.
*****For more-distinct grill marks while cooking, lightly weigh okra with a small sheet tray topped with a canned good or iron skillet.
