Zizzling Honey-Chipotle Glazed Flank Steak
ZIZZLING HONEY-CHIPOTLE GLAZED FLANK STEAK
1 T. olive oil
1 T. minced garlic
1 t. ground cumin
Kosher salt/black pepper
2 T. minced canned chipotle in adobo sauce
1 T. honey
Juice of 1 lime
Zest of 1 lime
1 lb. flank steak
- Position oven rack 6” below broiler and heat broiler to HIGH.
- Line large rimmed baking sheet with foil.
- Combine olive oil, garlic, cumin, salt and pepper in 1 quart saucepan over medium heat.
- Cook, stirring occasionally for 2 minutes.
- Add chipotle and honey and stir until heated through.
- Remove from heat and add lime juice and zest.
- Rub steak with olive oil and season with salt and pepper.
- Transfer to baking sheet and broil, turning once, until slightly browned (about 3 minutes per side for medium rare.)
- Spread glaze over top of steak and broil until it begins to bubble, 1-2 minutes.
- Transfer to cutting board, rest 5 minutes and slice against the grain and serve.
