Zesty Shredded Brussels Sprout and Bacon Salad
Ingredients
- 8 slices thick-cut good quality bacon, cut into 1” pieces
- ½ medium red onion, thinly sliced
- 2 lbs. shredded Brussels sprouts
- ½ c. toasted pecans
- ⅓ c. balsamic vinegar
- 1 T. firmly packed dark brown sugar
- 2 t. kosher salt
- 1 t. Dijon mustard
- Zest of 1 lemon
- 1 t. red pepper
- 3 T. olive oil
Instructions
- In large skillet, cook bacon until crispy.
- Remove bacon with slotted spoon and drain on paper towels.
- In reserved drippings in skillet, add onion and cook until starts to brown.
- Remove onion from pan and drain, also.
- In large bowl, combine sprouts, bacon, onion and pecans.
- In medium bowl, whisk together vinegar, brown sugar, salt, mustard, zest and red pepper.
- Whisking constantly, slowly add oil.
- Add dressing to Brussels sprouts mixture. Toss and taste for seasoning.
