Ingredients
  • 1 (12-oz.) container butternut squash zoodles
  • 1 (12-oz.) container zucchini zoodles
  • Olive oil
  • 1 (16-oz.) container chopped onion mix
  • 1 (10-oz.) container fresh pico de gallo
  • 1 (6-oz.) can tomato paste
  • 1 (5-8 oz.) container fresh baby spinach
  • Salt, black pepper
Instructions
  1. In a large skillet, drizzle bottom with olive oil and place over medium heat.
  2. Saute the onions and pico for 3-5 minutes.
  3. Add the tomato paste, stirring constantly and cook for another 3-4 minutes.
  4. Add the zoodles and saute 5-8 minutes or until tender, stir constantly.
  5. Season with salt and pepper.
  6. Add the spinach and stir in. Just cook long enough for the spinach to slightly wilt.
  7. Taste for seasoning again.
Notes
*****You can add chicken, meat, seafood or other veggies if desired.
