
Warm Potato and Green Bean Salad

WARM POTATO & GREEN BEAN SALAD
1 lb. small red potatoes, quartered
¼ c. good quality olive oil
3 T. apple cider vinegar or white wine vinegar
Salt, garlic powder, ground mustard, black pepper, dried basil, parsley flakes, to taste
1 lb. fresh green beans, cut into 2” pieces
1 pt. cherry tomatoes, halved or chopped
3 T. chopped red onion
1. Place potatoes in large pot of cold salted water.
2. Bring to boil and cook for 10 minutes or until tender.
3. Meanwhile, in bowl, whisk oil, vinegar and seasonings to taste.
4. Add the green beans to the potatoes, return to boil.
5. Cook 3-5 minutes or until tender.
6. Drain.
7. Place potatoes and beans in a bowl and add the dressing to coat. Mix well.
8. Add tomatoes and onion. Mix. Taste for seasoning.
9. Serve warm or room temperature.
