Unique Irish Nachos

UNIQUE IRISH NACHOS
NACHOS:
3 lb. Yukon gold potatoes
4 T. olive oil
1 t. black pepper
1 t. garlic powder
PAM
2 t. salt
2 c. shredded Monterey Jack/Cheddar cheese
8 slices cooked bacon, crumbled
For serving: Pickled onions, sliced green onions, sour cream and salsa.

  1. Preheat oven 425. Wash potatoes and pat dry thoroughly.
  2. Slice potatoes into ¼” thick rounds.
  3. In large bowl, stir together potatoes, olive oil, pepper and garlic powder.
  4. Spray two rimmed baking sheets with PAM>
  5. Divide potatoes equally between pans and arrange in even layers.
  6. Bake for 20 minutes and them remove from oven. Flip potatoes, rotate pans and return to oven.
  7. Bake until golden brown, about 10-15 minutes more.
  8. Remove potatoes from oven and sprinkle with salt. Let cool 5 minutes.
  9. Combine potatoes from the two pans and sprinkle with bacon and shredded cheese.
  10. Return to oven and bake until cheese is melted, about 5 minutes.
  11. Remove from oven and sprinkle with pickled onions, chopped green onions, sour cream and salsa. (Or top with your favorites).
