Unique Irish Nachos

UNIQUE IRISH NACHOS
NACHOS:
3 lb. Yukon gold potatoes
4 T. olive oil
1 t. black pepper
1 t. garlic powder
PAM
2 t. salt
2 c. shredded Monterey Jack/Cheddar cheese
8 slices cooked bacon, crumbled
For serving: Pickled onions, sliced green onions, sour cream and salsa.
- Preheat oven 425. Wash potatoes and pat dry thoroughly.
- Slice potatoes into ¼” thick rounds.
- In large bowl, stir together potatoes, olive oil, pepper and garlic powder.
- Spray two rimmed baking sheets with PAM>
- Divide potatoes equally between pans and arrange in even layers.
- Bake for 20 minutes and them remove from oven. Flip potatoes, rotate pans and return to oven.
- Bake until golden brown, about 10-15 minutes more.
- Remove potatoes from oven and sprinkle with salt. Let cool 5 minutes.
- Combine potatoes from the two pans and sprinkle with bacon and shredded cheese.
- Return to oven and bake until cheese is melted, about 5 minutes.
- Remove from oven and sprinkle with pickled onions, chopped green onions, sour cream and salsa. (Or top with your favorites).
