TUNA NICOISE SANDWICHES

2 T. Miracle Whip or mayo
2 T. Dijon mustard
1 (6-oz.) can chunk white tuna packed in water, drained
1 green onion, sliced
1 celery stalk, chopped
2 T. minced pitted kalamata olives
2 T. drained capers
4 slices whole wheat bread
Red tip lettuce leaves
Sliced tomato
1. Mix the mayo and mustard in a bowl.
2. Stir in tuna, onion, celery, olives and capers. Mix well.
3. Season to taste.
4. Divide tuna mixture between 2 bread slices. Top with lettuce and tomato and remaining bread slices.
