Good Morning Foodies! I warned Benny’s Big Star that there might be a raid on their baby spinach. I hope you get to try some of these recipes. It seems that some of you tried the Creamy Orzo with Sauteed Spinach recipe. Here is a heads up on what to do with leftovers—IF YOU ARE LUCKY ENOUGH TO HAVE ANY! These are my two favorites for the leftovers: 1-I like to fold in lump crab meat and serve as a side or stuff bell peppers or the large portabella mushroom caps. This makes for an elegant dish. You can also use cooked crawfish or shrimp, but the crabmeat is my favorite. 2-I actually stumbled across the next recipe. I had about 1 ½ lb. of lean ground beef and some leftover creamy orzo spinach. I combined the two using my favorite meatloaf recipe. It made the most delicious and interesting meatloaf. You can also just make individual hamburger steaks. Never throw away leftovers—THERE IS ALWAYS SOMETHING MAGICAL YOU CAN DO WITH IT! Even the, “I AM NOT SO WILD ABOUT SPINACH!”, people will find these recipes quite interesting. Spinach is such a versatile ingredient. You can use it in appetizers, breads, soups, brunch items, stuffings, added to other veggies, etc. Just let your imagination run with this great veggie! Have a great day!
