Tasty Green Chile-Garlic Butter over Roasted Oysters

TASTY GREEN CHILE-GARLIC BUTTER OVER ROASTED OYSTERS
6 large fresh oysters
¼ c. panko
1 T. vegetable oil
Garlic powder, kosher salt, black pepper to taste
1 bunch green onions, sliced
French bread, for dipping
GREEN CHILE-GARLIC BUTTER:
2 c. butter, softened
2 (4-oz.) can diced green chiles, drained and patted dry
1 t. garlic powder
½ t. kosher salt
½ t. black pepper

  1. Preheat oven 425.
  2. Arrange oysters in an oyster baking container.
  3. Top each oyster with 1 T. of the GREEN CHILE-GARLIC BUTTER.
  4. Bake until oysters begin to curl around the edges, about 6-8 minutes.
  5. Remove from oven.
  6. Increase oven temp to BROIL.
  7. In small bowl, toss together bread crumbs, garlic powder, salt and pepper.
  8. Sprinkle oysters with bread crumbs mixture.
  9. Add about 1/3 c. of the GREEN CHILE-GARLIC BUTTER to the well on the oyster baking container.
  10. Broil until lightly browned, about 2 minutes.
  11. Sprinkle with green onion.
  12. Serve with hot bread and additional GREEN CHILE-GARLIC BUTTER.
  13. GREEN CHILE-GARLIC BUTTER: In bowl, beat all ingredients for the butter with a mixer on medium until combined. Spoon into a small bowl. Serve immediately or cover and refrigerate until ready to serve.
