Tantalizing Smoky Chicken Pizzas
TANTALIZING SMOKY CHICKEN PIZZAS
¼ c. olive oil
1 large red onion, thinly sliced
1 t. crushed red pepper, or more if you like spice
4 individual-size baked pizza crusts or flatbreads
2 c. shredded rotisserie chicken
1 c. shredded smoked mozzarella cheese
1 c. fresh arugula
- Preheat oven 425.
- In large skillet heat 1 T. oil.
- Add onion and cook until tender, stirring occasionally.
- In bowl combine 3 T. oil and crushed red pepper.
- Drizzle this over the pizza crusts or flatbreads.
- Place crusts on baking sheets.
- Top with chicken, onion and cheese.
- Bake 10 minutes or until cheese is melted and crusts are browned.
- Top pizzas with arugula, drizzle with remaining oil and add additional crushed red pepper, if desired.
