Tantalizing Shaved Squash Dish
Ingredients
- 1 lb. mixture of yellow squash and zucchini
- 2 T. fresh lemon juice
- 2 T. olive oil
- Kosher salt, black pepper
- 2 oz. Manchego cheese
- 1-3 T. marinated capers
Instructions
- With a veggie peeler, shave off long strips of the squash, rotating the squash in your hand as you work around the seed-filled center. (Discard seeded part)
- Arrange the strips on a large platter, overlapping them slightly.
- Drizzle with lemon juice, olive oil, salt and pepper to taste.
- With the veggie peeler, shave the cheese over the squash.
- Top with the drained capers.
- Serve.
