SWEET POTATO-BACON BISCUITS (GRAND PRIZE WINNER-HARVEY MORRIS)
Ingredients
  • 3 c. all-purpose flour
  • 1 T. baking powder
  • 1 T. firmly packed dark brown sugar
  • 1 t. kosher salt
  • ¾ t. cream of tartar
  • ¼ t. cayenne pepper
  • ⅓ c. butter, cut into pieces
  • 1 c. shredded sharp cheddar cheese
  • 4 slices cooked and crumbled bacon
  • 1 c. whole milk
  • ½ c. mashed sweet potato
Instructions
  1. Preheat oven 450. Line a large baking sheet with parchment paper.
  2. In large bowl, whisk together flour, baking powder, brown sugar, salt, cream of tartar and cayenne.
  3. Using a pastry blender, cut in butter until mixture resembles coarse crumble.
  4. Stir in cheese and bacon.
  5. Make a well in center of flour mixture.
  6. In small bowl, whisk together milk and sweet potato.
  7. Add this mixture to flour mixture. Using a fork, stir just until combined.
  8. Turn dough out onto well-floured surface. Knead gently 12 times.
  9. Roll dough into ¾” thick rectangle.
  10. Cut into 8 rectangular pieces.
  11. On baking sheet, place biscuits 1” apart.
  12. Bake until lightly browned, about 12 minutes. Serve warm.
