Surprising Arancini Balls
Ingredients
- 1 ¼ lb. Italian Sausage or Chicken or Turkey Sausage (about 14 oz. cooked), casing removed
- 4 c. riced cauliflower
- 1 t. kosher salt
- 2 t. black pepper
- 4 c. Di Campania Classico Traditional Sweet Basil Pasta Sauce or your favorite marinara sauce
- 2 c. shredded mozzarella
- 2 large eggs, beaten
- 1 c. Italian bread crumbs
- ¼-1/2 c. grated parmesan cheese
- PAM
Instructions
- In a medium skillet, over medium heat, add the sausage and cook breaking the meat up until it is as small as you can get it.
- Add the cauliflower, salt, pepper and marinara sauce.
- Cook until cauliflower is tender and heated through.
- Remove from heat and add the mozzarella cheese and stir to mix well.
- Let cool.
- Take a plastic container or glass bowl and spray inside with PAM.
- Place the sausage mixture into the container, seal and refrigerate for at least 2 hours or overnight.
- When ready to prepare, preheat oven 425 and take a baking sheet and cover with foil and spray the foil with PAM.
- In one bowl, add the two eggs and beat them.
- In a second bowl, mix the bread crumbs and parmesan cheese.
- Take the sausage mixture, using a small melon ball scoop or larger (depending on size of the ball you desire), scoop and make a ball.
- In your hand, round it out, dip in egg wash, then bread crumb mixture and place on baking sheet.
- Bake for 20-25 minutes or until golden.
- Serve with marinara sauce or your favorite dipping sauce.
Notes
***You can freeze these before cooking them. After cooking them, if you need to reheat them, place on baking sheet and place in 350 oven and warm for 5-7 minutes.
