Spooky Peanut Butter Spider Cookies

SPOOKY PEANUT BUTTER SPIDER COOKIES
2 ½ c. flour
½ t. salt
¼ t. baking soda
1 ½ c. granulated sugar
1 c. creamy peanut butter
1 c. brown sugar
½ c. butter, room temp
2 T. vegetable oil
1 egg
1 t. vanilla
2 c. milk chocolate chips
36 small peanut butter cups, unwrapped
72 candy eyes

  1. Preheat oven 350.
  2. In bowl, whisk together flour, salt and baking soda.
  3. In the bowl of a standing mixer fitted with paddle, beat ½ c. granulated sugar, peanut butter, brown sugar, butter and oil until light and fluffy.
  4. Add egg and vanilla and beat until combined.
  5. Add flour mixture and mix until dough starts to come away from bowl.
  6. Scoop portions of dough to make each cookie onto parchment paper-lined baking sheet and refrigerate for 1 hour or overnight.
  7. Roll the cookies in the remaining 1 c. sugar to coat, then place them onto a parchment paper lined baking sheet about 1” apart.
  8. Bake 8-10 minutes, remove from own and carefully place your thumb in center of each cookies.
  9. Return the baking sheet back into oven and bake until cookies are still soft to the touch and just a little golden, 2-4 minutes. Do not overbake. Cool completely.
  10. Melt the milk chocolate chips in microwave and then place in a small pastry bag fitted with number 2 round pastry tip.
  11. Place the peanut butter cups upside-down into the indent of each cookie to create the spider bodies.
  12. Pipe a dot of chocolate onto the back of each candy eye and place in the center of the peanut butter cup right next to each other. Pipe 4 chocolate legs on each side of body.
  13. Use the tip of a toothpick to smooth out the legs of the spiders.
  14. Let spiders set for 5 minutes. Serve.
