Southern Hopping John
Ingredients
- 1 c. chopped celery
- ½ c. chopped onion
- 1 T. minced garlic
- 1 T. olive oil
- 1 (16-oz.) pkg. frozen black-eyed peas
- ¾ lb. cubed cooked good quality ham
- 2 ½ c. chicken broth
- 1 t. dried crushed red pepper
- 1 bay leaf
- 1 c. uncooked long-grain rice
- Salt and pepper to taste
Instructions
- Cook first 3 ingredients in olive oil in Dutch oven, stirring constantly, until tender.
- Stir in peas and next 4 ingredients.
- Bring to boil. Cover and reduce heat and simmer 30 minutes.
- Stir in rice. Cover and cook 20-25 minutes or until liquid is absorbed and rice is tender.
- Discard bay leaf. Taste for seasoning.
