South-of-the-Border Baked Eggs

2 strips thick-sliced bacon, diced
1 ¼ c. Tostitos salsa or your favorite
2 t. adobo sauce
¼ t. ground cumin
1 avocado, cubed
4 eggs
Chopped fresh cilantro or parsley

  1. Preheat oven to 350.
  2. Place two 6” cast-iron skillets on a baking sheet inside oven.
  3. Cook bacon in a saucepan until crispy. Drain on paper towels and pour out and save bacon drippings.
  4. Place the saucepan on medium-high heat.
  5. Whisk together salsa, adobo sauce and cumin.
  6. Place salsa mixture into hot saucepan. Deglaze, scraping up brown bits.
  7. Remove skillets from oven and generously grease with reserved drippings.
  8. Divide avocado and salsa mixture between skillets.
  9. Top each with 2 eggs and bake in oven until egg whites are set, 15-20 minutes.
  10. Garnish with bacon and cilantro.
